Nam Pu is a favourite seasoning which is made from small crabs found in rice fields. When it rains, there are a lot of crabs and people collect and preserve them. The crabs are pounded until they turn to a liquid. Then herbs are added and the mixture is simmered until it becomes thicker. This dip is a source of protein and calcium.
