Caster sugar is also known as superfine sugar and is a popular baking ingredient across many parts of the world. The only difference between caster sugar and granulated sugar is their texture. Caster sugar has more finely ground crystals than granulated sugar, which means it dissolves faster than granulated sugar, making it perfect for desserts, sauces, meringue, mousse, whipped cream and beverages. Because of its ability to dissolve easily, caster sugar is also frequently used for sweetening drinks. Many bartenders use caster sugar in place of simple syrup when making cocktails.
